One-Pan Meals That Don’t Suck
One and done.
Now that we’re in charge of meal prep, we better understand the appeal of yesteryear’s TV dinners. While we were once delighted by the novelty of having the whole enchilada of dinner in one foil tray (despite acute dismay when the peach cobbler bubbled into the peas), we’re guessing our parents most appreciated the low-hassle prep involved. Of course, our culinary skills and tastes have matured since then, but we still don’t have time for a project every single night. That’s why we’ve come to appreciate the ability to deliver a square meal within one pot or pan. While we await the release of Melissa Clark’s unfussy take on one-pan meals (Dinner in One: Exceptional & Easy One Pan Meals due out 9/6), we’re sharing some of our favorite one-vessel recipes to-date.
It’s a good thing.
Leave it to Martha Stewart to deliver a flavorful and elevated fall meal all done in a single roasting pan. This Roast Pork Tenderloin with Acorn Squash has been in our autumn rotation for years. The addition of hoisin sauce kicks up the flavor (make sure to brush the squash with it as well).
Don’t be foiled.
Come colder weather we sometimes struggle to make fish feel like a hearty meal, but this Foil Baked Sea Bass with Spinach somehow feels both light and rich. We can report that we subbed in cod to delicious effect. Next go around we might add some white beans for even more comfort.

As in breakfast for dinner—what did you think we meant? This turkey hash is what Gwenyth does best: a solid and healthy recipe with solid instructions for flavorful food. We occasionally top it with an over-easy egg (just not a jade one).
Skip the takeout.
When we’re in a quandary over what to make for dinner, this Egg Roll Skillet recipe is on speed dial. We use ground turkey and top it with some sweet and sour sauce and crisp noodles.
